Tuna-Salad Salad & Balsamic Dressing

I bought this groovy little gadget from Pampered Chef years ago, and I’ve never purchased salad dressing since! It has recipes for four different dressings right on the side. The Italian Dressing and the Asian Dressing are my two favorites. You mix, pour, and store all from this one gadget! You can order one for yourself right here:

Tuna-Salad Salad
For 2 servings
2 cans wild-caught tuna (one can per serving)  
2 T chopped celery and 
2 T chopped onions
4 T organic mayo, and set on
a generous bed of spinach
Spinach is topped with
other ingredients which vary from salad to salad such as slivered almonds,  English cucumber, even raisins. I prepare the spinach salad first, then top it with a couple of tablespoons of my homemade Italian dressing, then put the tuna salad atop that.

Italian Balsamic Dressing

1/2 c balsamic vinegar
1 c extra-virgin olive oil (EVOO)
10 drops of liquid Stevia (or 1 T agave syrup)
2 pressed garlic cloves
1/2 t oregano
1/4 t basil (or even better, top the whole thing with a couple of basil sprigs)
